Any ideas for a parve pesach chulent

A single guy just called that he has no where to eat shabbos lunch.
I don't mind having him but he doesn't eat meat.
what could I make him really fast that is hot and could stay on the blech overnight.

Put up potato kugel and leave on belch for overnight potato kugel.
Otherwise cook up quinoa, refrigerate and serve at room temp.

I did this one year and it come out great.
I took a bunch of root veggies
Potato, sweet potato, parsnip, carrots, celery root.
A little bit of oil and seasoned well.
I put this on a 9x13 pan lined with parchment paper.
Roasted it 1/3 of the way in the oven.
Then, before Shabbat I poured some water on the bottom of the pan
I put it on top of an upside down pan so it was not directly on the electric blech.

Or, if you hold that you can heat up dry food, skip the water, and put it on the blech Shabbat morning .

Serving things room temp is another option.
Ratatouille
Roasted brocolli
Salads
Potato salad
Sweet potato salad

A veggie soup cooking all night is also good.
Take carrots, celery, celery root, parsnip tomato sauce, lemon juice, salt, and just a sprinkle of sugar. Mix well. Then add enough water to cover the veggies, a little more. Taste and adjust seasoning.
Put it on the blech raw, right before Shabbat.

If he also eats eggs (and you eat gebruchts) we really enjoy veggie soup with kneidelach for shabbos lunch. I make it thick with lots of finely diced veggies and the kneidelach absorb a lot of liquid so it eats almost like stew.

For Shabbos ha'gadol, I put in a croc pot:
-Chicken legs w/ skin in a soup bag
-Flanken, & some bones 4 flavor
- fingerling potatoes (mini golden odd shaped, found at Trader Joes) of course reg golden just fine
- Carrot big pieces, some chopped large pieces
- Onion, some chopped, a couple small whole
- Garlic
- Dash of decaf instant coffee (adds rich flavor)
- Honey
- Onion soup mix
- Garlic & onion powder, pepper (no salt b/c of soup mix)
- oil
- water so not too dry
Set on low from the start immediately b4 Shabbos (had ready in fridge to just put on heat element with reminder note by neiros)
Verdict, REALLY GOOD! Smile
