We bought a big case of potato starch canisters and used about half of them over Pesach... Anyone know if I can just put the rest away till next year?
I'm also wondering about matzah. We have handmade shmurah matzah, wheat as well as oat... Not much but it would be nice to save... Anyone did this successfully?

Yes. I save machine matzah almost every year in the freezer. No one can tell the difference between the old and the new.

Cover your he matza so no critters get in. Crisp them up in the oven on low to make them crunchy again.
Potato starch in sealed packaging will be fine.

I put away one sealed canister from last year. Ised it this year. It was perfectly ok.

IME:
* Potato starch stays good for several years, even in a canister that has been opened.
* Oat matzah goes rancid very quickly, within 2-3 months.
* Regular wheat matzah tastes stale after 6-9 months.

Unopened potato starch should be fine if stored at or below room temperature. I've never tried with open.
Matza goes stale or loses its flavor- enjoy the handmade for Pesach Sheini and the machine whenever.

Machine matzo stored stays fine and is ok to do so. Other things like matzo meal and nuts and potatoes flour I freeze for a year and stays fine.

the cost savings vs the extra freezer space needed....
We kept several sealed boxes of handmade matza from last year and used for matza meal or cooking. I would not keep machine matza, since we eat it year round. I also use potato starch year round so use it up.

I don't freeze potato starch, never had a problem. I do freeze matza meal, matza cake flour, nuts, etc.
The non frum stores put lots of stuff on half price sale after the sedarim. I often stock up for next year, as well as buying anything I may use year round.

It was amazing opening the Pesach cupboards this year and finding 8 boxes of machine shumra (fine once crispied up in the oven) ; jam; ketchup and tea. Hope we find good stuff this year for next year.

I save spices, salt, potato starch, ground nuts, matza meal. Not in the freezer, just sealed and in boxes in the shed. All fine except one box of matza meal which was a little stale.

Just keep a list of what you save so you don't overbuy again, and use last year's stuff first before any new purchases.

Potato starch I keep in a sealed cabinet.
