3 lb. veal stew
1 lg. onion in chunks
3 tbsp. oil
2 med. peppers in chunks (at least one, if not both green)
1 small can mushrooms
1 clove garlic, crushed
14 oz. can tomato puree or tomato sauce
14 oz. can water
dash red pepper
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. dried parsley
Brown veal and onion in oil. Add peppers. Add remaining ingredients. Simmer covered for 1½ hours. Serve over pasta or rice.
