I told my dh that I really want to make something that is special for R'Chodesh. I was really busy this week So as it goes I will not be able to start cooking till Friday Morning. We make early Shabbos as you see I do not have much time. Can anyone help me with a easy quick and elegant Friday night meal plan? I already have whole wheat challah dough in the freezer so that is a start.
The catch is that it needs to be healthy and usually cooking healthier needs more planning and a bit more time.
The clock it ticking..

First of all Willow it is so wonderful that you want to make something special even with the busy week you mention.
My DD makes the best Shabbos meals and they are always healthful and lovely.
I.e. (you already have the dough for challos)
fish--either gefilte fish loaf plain or baked with veggies & sauce
or a piece of salmon on greens.
cold soup
Chicken stir fry (chicken, rice, colorful vegetables)
Salad
Bananas dipped in chochlate sauce and frozen
For Lunch: challoh
Salad with fruit, turkey in it
cholent
sliced chicken cutlets wrapped around asparagus and brushed with mustard vinegarette
Fresh fruit
Have a Good Shabbos and Good Chodesh

It could probably also be another "tavshil" or delicacy specially in honor of Rosh Chodesh, but for sure the minhag by us is an extra kugel specifically.. and Shabbos Chanukah, Rosh Chodesh, well that would require two extra kugels.
I think it has to do with taking out two Sifrei Torah. So if you take out three, it's three kugels.

hey T.R. I heard once that purim is a minhag to make 4 different types of kugels, I don't remember what, why and what they represent. did you ever hear that?? may be we'll just discuss it again before purim....
