I also find these rebbeshe weddings facinating. Was just watching some old mitzva tantz u tube clips of Belz weddings. Does the chosson not dance with with kallah? The one I watched the chosson used the gartel.

All the videos I can find are of the men, and frankly, they look pretty much the same to me.
I want to see the women, and the gorgeous dresses, and the fancy hats!
Actually, I want to see the hats most of all. Anyone know where I could find them?

Me, too!!! I love the Belz weddings to watch on YouTube, but I wish I could see the women celebrating!!! What are they wearing? The dresses, everything!! My dh told me it's not tzunius to showing Belz women celebrating though.😒
(We're not Belzer. I can show you a great fun Lubavitch wedding from YouTube if you want, not mine.)

On the internet at least, there is no record of hasidic women existing.
Google has failed me. I tried every combination of search words I could think of, looking for hats, double covering, etc.
I got hijabs, nuns, and men in hats. Sure, there was an occasional turban, but I want to see the fancy hats!
I've yet to see a picture of a shpitzel on Google, too.

Come on... it's rebbish. Means they get gifts from other rebbes and stuff. Whole different ballgame. No one is jealous of all that. The takanos are for the chasidim, and were very well received too.

I'm not really "in that world" although I do identify as somewhat Chassidish, so I might not be 100% right, but here is my take:
In general, the Mitzvah Tantz is a very, very holy and meaningful thing. Usually only family is present at it. At a Rebbishe wedding the entire Chassidus is considered family, so they all stay, but it isn't as private an event and thus the Chosson and Kallah don't dance together for Tznius reasons.
It is also possible that you did not see everything, and that it was a Chuppas Nidda, and so maybe the Kallah wasn't actually holding onto the Gartel.
Please correct me if I am wrong.

Rebbishe families have varying minhagim.
In Klausenberg, the Chosson and Kallah hold hands during the mitzva tantz.
In Bobov, they hold one hand and dance around each other.
In Viznitz, they dance the mitzva tantz the night before the wedding at an event called the "forshpiel". They do it with a gartel.
Others use a gartel at the chasunah and still others skip the gartel and just dance back and forth in front of the kallah.
You can see some of the above variations on Youtube.

Viznitzer engaged couples see each other the night before their wedding?

Only the Rebbishe do the "forshpiel". They don't really see each other. The Kallah is veiled and the gartel is really long. They don't make eye contact.
