I currently have a dish drying rack and I place a towel underneath it to absorb dripping water. The towel winds up having an unpleasant smell, and I find the counter underneath the towel is usually wet, so I'd like to find an alternative. So far I see a silicone mat and a microfiber mat. Are there other suggestions? Any one more preferred over the other? Thanks!

I use a plain dumb plastic tray designed for this purpose. Nothing to squeeze out or launder. After a while if there's mineral buildup from water evaporation, a bit of plain vinegar dissolves it.

Even as a kid I swore I would never have plastic drying racks like my mother
There is no way they just don't get disgusting

Personally, I use a dish drying mat and I have no problems with odors. However, they do need to be washed occasionally, like once a week. I find that they absorb the water a lot quicker and more efficiently than silicone mats
