I would love to get ideas for meals- both lunch and dinner - that are on the healthier side, specifically trying to stay away from processed sugar. But also budget friendly, for a family of about 8.
Any ideas and tips welcome!

Mexican lentil rice casserole ( I would serve with soup and salad)
Make your own burrito or taco bar with refried beans, brown rice, sautéed veggies, guacamole, salsa etc
Quinoa with roasted vegetables and pesto or chimichurri
Split pea soup or lentil soup with spinach or Brocollo quiche

brown rice and beans (dry in bulk) but it is high in carbs, it will turn to sugar in the body, IMO the same as white sugar.
Eggs- omletes with lots of veggies. I use all leftover veggies , even salad inside. I've even used leftover Israeli salad that is a little soft from the seasoning, cucumbers and all. Wilted lettuce just looks like greens in an omelet.
Tuna or canned salmon - you can make tuna/salmon patties. Here you can also add vegetables
Then you have chicken and meat which are more expensive, with a roasted veggie side dish and a salad.
