I usually make one with whatever vegetables are on hand - potatoes, sweet potatoes, carrots, zuchinni, turnips, parsnips, etc.
Per pound of vegetables: 1 egg, 1.5 tsp salt, shake of pepper, a bit of oil.
Mix ingredients, add grated vegetables, bake in preheated oven at about 375-400 for 1-2 hours (depending on oven, kugel size, etc.)
