Or does anyone know a mohel in the NY area who specializes in this who I could talk to?

I know Rabbi Fisher from Monsey has done adult brissim. I don't have his number anymore but I probably could get it for you.

We've used Rabbi Fisher for our boys, and he was excellent. You can PM me for his cell number.
You can also try Rabbi Paysach Krohn, I would imagine he has done adult brissim as well.
