ISO Egg free chocolate cupcakes recipe

Does anyone have a good chocolate cupcake recipe that's egg free?

I make this all the time- usually double it for a bundt cake but you can gauge depending on how many cupcakes you want. This recipe fits an 8x8 pan. Bonus- no mixer!

1.5 Cups Flour
1 C sugar
1/3 C. Cocoa
1 t. baking soda
1/2 t. salt
1 C. Cold Water
2/3 C oil
1 T. vinegar
1 t. vanilla extract

Preheat oven to 350 degrees. Place first 5 ingredients in bowl and mix. Combine liquids in a large measuring cup and add to dry ingredients. Mix to combine. Bake until tester comes out clean- about 30 min for an 8x8 pan- longer for bundt pan, likely shorter for cupcakes. Enjoy!

I also make this recipe (it's called Wacky Cake on many recipe sites) except that I use coffee instead of the water. It boosts the chocolate flavor.
When I make it as cupcakes I like to stick a square or two of bittersweet chocolate in the middle of each cupcake. Or sometimes I add chocolate chips.
Sometimes I bake it in two loaf pans. I split the loaves horizontally, fill with parve whipped cream and top with a chocolate glaze. We call it Devil Dog cake because of the shape but really it's more like a Ring Ding Smile

I'm happy I made a triple recipe because quite a few are gone I shared with my daughter,obviously 😉

So glad it worked out! I may try it in cupcake form as well.

I have also made this in 2 bowls, leaving the cocoa out of one, and adding a little flour and vanilla, and making a marble bundt cake out of it. It is a lifesaver if anyone has to accommodate someone with an egg allergy.
