I have some brown bananas and I ican't stand throwing them out.
I need a recipe t hat doesn't involve shortening or too much fat.

honestly the best taste is if you don't use them when they're already really brown ... just mildly brown ...
muffins or banana cake
any recipe would do ... just eliminate some of the oils ...

here's a yummy banana muffin recipe I make when my bananas get brown. By the way, if your bananas get brown & you don't have time to use them up, you can freeze them & then use them when you need them.
1 1/2 c. oats
1 c. flour or whole wheat flour
2/3 c. granulated sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 egg
2 c. mashed bananas (4-6 bananas)
1/3 c. oil
optional:1/2 c. copped nuts
-Combine first 6 ingredients in large bowl. Mix well.
-Beat egg, bananas and oil in small bowl until smooth. Add to dry ingredients
-Stir just until moistened
-Stir in nuts, if desired
-fill muffin cups almost full
-Bake at 375 for 20-25 minutes
Yields: 12 muffins

hey corn muffins would be good too ... but I'll assume you do not have corn meal ... so here is a banana cake ...
3 eggs
1 1/2 cups sugar
1/2 cup oil
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup water
3 cups flour
2 mushed bananas
add choc chips if desired
bake 350 for about an hour ... till center springs back upon touch with finger ...

Spice & Spirit has a great one. haven't made it in a while though.
Oats - we NEVER eat them, but I always have them in the house because so many recipes require them.

that oat-banana bread was fantastic!!!
I subbed 2 T molasses for the sugar and added some nuts and baked like a bar cookie in a 9x13 pan.
theyre in the freezer now for quick breafasts to grab before work!

I've been making this banana chocolate chip cake and everyone just loves it:
3 C flour
1 Tbsp baking powder
2 C sugar
1/2 tsp salt
3 large rip bananas
2 eggs
2 sticks margarine melted
1 tsp vanilla extract
1/2 C soy milk
1 C chocolate chips
Preheat oven to 350
grease bundt pan
in a bow mix flour, baking powder, sugar and salt (if you use salted margarine don't add salt)
in another bowl mash bananas mix in eggs, vanilla, margarine, and soy milk
add dry ingredients with wet ones
stir in chocolate chips and pour into prepared bundt pan
bake for 45-55 min

And I made it in a 9x13 and it fit perfectly.
