U could make matsa brai.
Break up matza put in bowl mix with eggs n water/milk (u said u eat cooked eggs) let it soak then fry it. Like eggy bread. Sprinkle with cinnamon n sugar after if u want

Smoked salmon on matzo or as salad with avocado

Veggie soup with a salmon salad
Cottage cheese, diced tomatoes and cucumbers and matzah or Pesachdig crackers .
Greek Yogurt with cut up fruit
Matzah and muenster cheese slices
Grilled chicken salad

Can DD have Pesach crepes, it does have eggs in it.
I make a ton before Pesach, I make them parve.
Then I make wraps, pizza, lasagna, etc.
