What is a pesach set? Pillow case, matza cover, matza tray, etc?

OP, don't buy Pesach sets for lel haseder based on "what is in" unless you plan to change it every second year.
IMO buy something very classical that DH will be thrilled over. Let him decide. It's the time when we are definitely allowed to show off the very best items we have. IMO I would buy without (hardly) looking at the price tag.

Also get something dark that won't stain easily.

DH may want something that speaks to him, that feels like Pesach to him. I know that when it was time to get my sons tefillin bags, I had a very different idea than they and dh did.
Also, by all means get a nice set, but be aware that in many households involving children (whether your own or extended family), school-made afikomen bags, pillowcases, etc often end up replacing the store-bought ones. My parents' guests even used one of my kids' creations so that both kids could have their things used at the same time.

If I were getting one nowadays, I would opt for the leather ones as opposed to the fabric ones. They won’t stain as quickly.

Leather ones don't need a plastic that is why I prefer a cheap leather one over a fancy expensive one because the plastic takes away from the beauty. Closeout Connection is the best priced. They have them online for $70 for regular and $80 for faux leather.
There are all price ranges up to at least $500 in the Judaica stores.
