I have leftover minute steak and brisket (not pulled) from Shabbos. Is there any way to repurpose it into some sort of meat pizza/flatbread?

Sure! I just made something like this from leftover cholent meat (autocorrect keeps replacing cholent with cholesterol...it's on to something)
Cook the meat in a crockpot to soften it so you can shred/pull it. (You can skip this step if it's already soft)
I used Brooklyn bred pizza crusts and pre-baked them for 3-4 minutes but you can probably use whatever you want. Then I did a layer of Dijon mustard (like the tomato sauce on pizza) spread the pulled beef, and drizzled with honey BBQ sauce. I also had some leftover pastrami that I diced and threw on as well. Bake at 400 or so for a couple minutes, not too long or it dries out, and enjoy!
