It's not bad (of course not as good as fried but...remember the Nes occurred with OIL, but you can just spray the oil, you don't have to fry!)
After reading a few recipes I invented my own
1/4 c almond flour
2 TBSR coconut flour
2 eggs
1/4 c hemp milk (you could use coconut or soy)
1/4 tsp baking powder
(should be some salt in the batter but I don't usually cook w salt)
mix well then put in 2 ice cubes & chill in fridge
(you might have better results if you dredge in almond flour first. Will maybe try that next time & update)
For my veg I used:
2 carrots, sliced diagonally
2 scallions, cut in 1/3s, open & check
a few cauliflower & broccoli florets from freezer
a few spinach leaves
a few mushrooms
other ideas: whole green beans, diagonally sliced celery, zuccini, eggplant
Dip in batter then place on cookie sheet lined w parchment.
sprinkle or spray oil
broil 10 min on first side, sprinkle a litlte more oil, about 4 min on other side, watch carefully
to be authentic drain on bamboo mat, I just put mine on a plate w a paper towel
DIPPING SAUCE: a few spoons of soy sauce or coconut amino acids, a little ginger & stevia
(I was actually contemplating ordering some serious fried food. I think my stomach is going to thank me later for doing this!)
