This is not a joke. I am having someone for Shabbos meal who is gluten-free, allergic to Soy, and trying to stay carb-free right now. Any idea what I can serve for dessert besides water?

fruits have carbs. nuts don't have many carbs.

There is NO such thing as NO carbs iunless you will serve them olive oil, coconut oil, or other fats.
Even protein has negligible fats.
That being said you can google keto desserts, but before you go all out making something, find out if they eat any sugar substitutes or nuts
For example I eat within a keto way, but I may be more strict than most since I try to keep any keto treats to VERY rare occasions.
I try not to eat sweet things nor nuts.

A nice tea.
As a gracious hostess, of course you would like to serve dessert. However, as a gracious hostess, you are also trying to accommodate her dietary requests.
If her requirements don't allow for dessert (which they don't) then the gracious thing to do is serve a relatively healthy option with dessert (fruit, nuts) and offer your guest a tea.
She can choose to partake of fruit-carbs or nuts. But you cannot invent a carbless dessert.
