Bag broccoli
2 tbs olive oil
3 cloves garlic, sliced
kosher salt and pepper
Preheat oven to 450.
Toss broccoli with oil, garlic, salt and pepper on a baking sheet.
Spread them out and then roast without stirring until the edges are crispy and the stems are crisp and tender, about 20 minutes.
I found this recipe online and I make it all the time. It's best fresh though.

Agree with above. I love roasted broccoli and cauliflower. It’s simple and tasty. You could also use an immersion blender to make the cauliflower into a soup after roasting.

I just found this recipe for cauliflower popcorn online. Yum
INGREDIENTS
1 large head of cauliflower – about 2 pounds, cut into large chunks
2 tablespoons olive oil
1/4-1/2 teaspoon kosher salt
1/4-1/2 teaspoon chili powder
1/8 teaspoon garlic powder
DIRECTIONS
Pre-heat your oven to 450 degrees.
Cut the cauliflower into large chunks.
Line a rimmed baking sheet with parchment paper (this makes clean-up easier!)
Place the cauliflower on the baking sheet and toss it with olive oil, salt, chili powder, garlic powder, or any seasonings of your choice.
Cover tightly with foil and bake for 15 minutes. This will prevent the cauliflower from burning during the roasting process.
Remove the cauliflower from the oven and remove the foil. Place the cauliflower back in the oven, this time uncovered and continue roasting for 35-40 minutes, or until the cauliflower starts to turn brown.
Remove from the oven, and adjust seasonings according to taste- you may need a little more salt. Enjoy!

Mashed "potatoes" cauliflower.
Boil a bag of cauliflower until very soft. In the food processor, using the S blade, add that cauliflower drained, sauteed onions, salt, pepper, garlic/onion pd, and a tablespoon of mayo. Process really well until super smooth. I like this even more than mashed potatoes!

Make kugel, mix boiled, mashed veggies with sautéed onions, salt, pepper, eggs and bake.

I posted a pesach broccoli stir fry recipe here a while ago, I'll try to dig it up and post a link.
For a decadent treat, the kids love fried cauliflower -- dip pieces in egg and either salted matza meal or salted ground almonds, deep fry in hot oil.

Beef with broccoli. I make pepper-steak and use broccoli instead of peppers.
I make broccoli or cauliflower plain cooked with salt or seasoning to taste. It can work as a simple side dish if the rest of your meal is nicer or fancier mains.

You can prep a bag of frozen broccoli/cauliflower on the hot plate on YT.
Pour a kettle of hot water over frozen broccoli in a colander over the sink. Then make fresh broccoli salad.
Chop small, add eggs, season and make a kugel.

I usually don't patchke for lunch, but if you have a crust recipe for a dairy quiche, I may just make one for my family one day on C"H.

Meaning before Yom tov for the second idea, right?

If you have a non digital hot water urn that you can refill on YT, dump it over the frozen broccoli on YT. Refill urn. Then make the salad fresh on YT.

It's easy if you eat gebrochs, but still not difficult if you don't. Which recipe would you like?

My recipes are still away. The filling is a high egg based mixture. I skip the crust but you can do thin sliced potatoes or shredded potatoes.
