Overnight potato kugel - help!

I’d love to try making overnight potato kugel but have no idea how to. Anyone care to give instructions?

Big Roaster recipe: (you can half it for 9x13)

10 lbs potato peeled (approx 20 potatoes, or 2 5lb bags)
18 eggs
2 cups oil
1 cup seltzer
2 teaspoons black pepper
6 teaspoons salt.

Preheat oven to 500

In a large bowl, or directly in foil pan, combine and mix the eggs, oil, seltzer, black pepper and salt. Finely shred potatoes (or shred half and grate half). Add to egg mixture and mix well by hand.

Bake uncovered at 500 for an hour (or till light brown on top). Remove from oven, pour a cup water over it. Cover tightly with lid or double layer of foil paper. Set oven to 211, put a pan of water on lower shelf, and the kugel on upper shelf, let it bake overnight (or at least 8 hours or so).

Make your regular kugel recipe. Put it on 550 for 20 minutes then lower to 250. Pour a cup of water, cover and bake overnight.

I have a similar recipe. I am no health nut but do not appreciate excessively oily foods. Just as an FYI, I do not measure the oil. I put in the pan I will use for the kugel, just enough to cover the bed & heat it up in the oven before adding to my batter.
