If it's a scheduled visit (everyone will be on their best behavior), what can I glean from a short visit, and what should I be on the lookout for?

Try to be there for recess, lunch, or dismissal to get a sense of supervision (or lack thereof). Ask where the graduates go. Wander the halls a bit, looking at student work on display. (If there isn't any, that could be a red flag.) Introduce yourself to the office staff.
After the tour, speak to parents at the school, preferably people whose outlook on life resembles yours. Ask how the staff deals with difficult or unusual situations that arise.
Remember that no school is perfect, but many are very good. These people will spend more time with your child than you will, so make sure the atmosphere is kind and supportive.
Good luck.

Look at how the older boys behave and interact with each other in the hallways etc This will be an indicator of how the graduates, including one day your son will look
