Help me prepare a Sheva brachos menu for 30-40 that can be mostly prepared weeks in advance and frozen. Im happy to prepare raw, freeze and just cook the day of or day before Sheva brachot.
I work ft and are going away yom tov. The wedding is the week after Sukkos and I'll be back and working long hours. I can set up the house on the weekend, but need food help.

Are you looking for a meaty menu or milky? I would suggest that you freeze prepared food rather than cooked as otherwise you won't be able to freeze any leftovers.
Basic Meaty Menu for ideas on what can be frozen
Rolls/challos can be made in advance or just bought.
Appetizer-some sort of soup would make sense being in the fall and that can be frozen.
Main-
Rice freezes well
Chicken-flavor how you want and put in the freezer in trays, do the same for meat
You could potentially flavor frozen string beans and leave frozen and just cook on the day
Dessert-Icecream

I've been to many at home who had a nice lettuce & cold cuts salad with bread sticks as an appetizer.
Otherwise, butternut squash soup is a typical good choice.
