I'd like to make a fruit cobbler but can only find recipes with a crumble topping. Any ideas if I wanted to make more of a soft batter topping?

I have one. The result is cakey and it calls for plums and berries, but you could use your preferred fruit. Is that what you are looking for?

https://peartreekitchen.com/no.....bler/ - you can adjust as follows:

1/2 cup margarine (one stick)
1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
3/4 cup orange juice or pareve milk
12 oz fruit of choice

The one I'm familiar with uses egg instead of liquid, but this one is closer to a batter (instead of cookie dough consistency) and seems easier.

My favorite fruit for this recipe are plums but it can be made with any summer fruit or fruit combination or thinly sliced apples.

4 or 5 servings

3-6 peaches, nectarines, plums or apricots depending on size; sliced.

2/3 cup of sugar, plus a little for sprinkling (I use vanilla sugar for this.)

1/2 cup all purpose flour

1/2 tsp. baking powder

Pinch of salt

20 gram margarine (about 1 heaping tablespoon - use butter for dairy)

1 large egg beaten (or two small)

1tsp. vanilla extract or more to taste

Preheat oven to 190 C. (375 F.)
Place fruit in a shallow 3-4 cup baking dish
Sprinkle fruit with a little sugar. (I use vanilla sugar)
Sift flour with baking powder and salt. In a bowl, use a fork or beater to blend butter, 2/3 c of sugar, egg and vanilla. Add the flour mixture and stir it in.

Spoon large spoonfuls of the batter on top of the fruit. It is not necessary to cover the fruit completely. Bake for 25-30 min or until a firm crust has formed. Serve slightly warm.
