Can beets be eaten raw ?

I never tried it and saw grated beets in a salad recipe... Just wondering if it must be cooked first or can it be eaten raw ?

They're safe to eat raw, and they're pretty good if they're sliced thin or grated.

Shredded raw beets is one of my favorite things to put into a salad. I actually prefer them raw.

Fair warning and TMI, but I ate beets the other day (don't do it often) and was greeted with pink...ahem...bodily fluids for couple of hours. Legit thought I was dying, but BH it went away by the next morning.

Doesn't happen to everyone, though.

Pesach we use lots of beets. Chrein gets eaten with fish and chicken/meat, and we have plenty of beets side dishes. Well, suffice it to say, we learned that beets color more than just fingers. It turns up in the liquids and in the solids in toilet.
