When are you making your cheesecake?

When are you all making your cheesecake? Are you gonna do it on thursday with shabbos cooking and hope it stays good in the fridge, will you freeze it sometime earlier or will you make it fresh on Sunday?
If you freeze it, what recipe are you using??

I started last night since I have to make alot of them. I use several different recipes. I have never had a problem freezing cream cheese cheesecakes. I will put the toppings on before Yom Tov, though, I think that helps it taste its best.

I will make it sometime next week. I am waiting to see what the Binah will have this monday. The wrote that there will be a 16 page recipe section for Shavuos.

Frankly, I think I'm skipping it this year. Ice cream is my current dessert of choice, though I'm not committing to anything one way or the other.

Seriously? You'd better taste before serving to guests. Even if they're well wrapped, they'll get freezer burn after a while.

I made mine last week and froze them, but now I want some for Shabbos (serious craving) so I'll have to whip up another one for the weekend.

[Clarissa, dahling, they're ALL severely Milchig, and no low fat anything, so I do think your pleas have not been in vain.]

I found that frozen cheesecakes, when defrosted, become a bit soggy.
I plan on making them Thursday and keep in the fridge. They last at least a week in the fridge.

Thanks all!! I think I will make on Sunday and freeze... Or maybe on Thursday and leave in the fridge... Oh well, I guess I still haven't decided. That leaves me all shabbos to debate about it LOL

I was planning on making any this year as I'm due then but maybe my sister wants to make me one? Hint, hint? Nah, maybe I'll make one on Sunday for us to have for breakfast on Yom Tov.

you guys are scaring me. im a very organized person, but I myself dont see the point in making everything in advance and freezing, when I have saturday night and all day sunday with my husband home to take the kids out all day to make everything nice and fresh.

so you know where I will be at 7 a.m sunday morning!

You guys are totally neurotic. shock What ever happenned to the 'new simplicty'??

I will make the cheesecake either Thursday or Sunday.
Cheesecake will stay fine in the fridge for at least a week. Since it will be totally gone by Monday afternoon, I dont see a problem.
