What am I doing wrong? (Blintzes)

I sat up for 2 hrs last night making crepes for blintzes. When I tried to roll them today they all cracked and crumbled in my hands. I didn't get one good one! Can someone post a good recipe with exact instructions? Or give me some tips? This has happened to me before.

4 eggs
1/3 c water
1/3 c potato starch
Salt

I use this to make lukshen but I double dip the batter on the crepe maker for blintzes. The lukshen came out great. The crepes not.

Why don't you use the lukshen for the blintzes?

Maybe the crepes are too thick. It doesn't need to be thicker than the noodles.

The noodle ones are paper thin. They're almost transparent. I don't think they can hold potatoes inside them.

Did you try bringing them to room temperature when filling? I find they get a bit dry when cold

They did sit out for a bit but then I thought they might be too cold so I popped one into the microwave for 5 seconds. Still cracked when I tried to roll it.

I think your batter needs some oil. In the pupa cookbook they have a good recipe. Bhatzlocha

This once happened to me as well. I learned my lesson and I fill them the same day as I make the blintz leaves.

Could be. I wonder if adding oil would make it more flexible and less rigid?

Anyone have the Pupa cookbook? Can you please post the recipe?

Me too. I always fill them right away or they get dried out.

I think I use the same recipe with oil instead of water. I dissolve the starch in water though and whisk it in.

I always mix the batter with a hand blender and I add 2-3 tbsp oil to the batter, the potato starch tend to sink to the bottom so while I wait for the crepe to cook I constantly mix the batter so every crepe gets an equal amount of potato starch

I made this mistake last year. I worked so hard and the crepes cracked. It's because they were in the fridge. You have to make them and fill them the same time.

After I Make them I pile them on a plate and cover tightly with plastic wrap. I have never had them dry out.
My recipe is:
5 eggs
1/2 cup potato starch
1 cup water
1 salt

We made 8 recipes today.
I fill them with sautéed shredded carrots and cabbage. Delicious.

1-Use less potato starch
2- double up , use two thin ones
