Help me make schnitzel

I have no pesach crumbs in the house and no matzah meal.

I do have almond flour and rorie's kosher for pesach flour. And lots of potato starch, onions and eggs.

Suggestions?

Add some potato starch and salt to 2-3 beaten eggs… enough potato starch that it should be a thick consistency yet, much thinner than a cake batter. Dip cutlets and fry. Enjoy!!

Thank you. Does it get fried like that or dipped again into starch or almond meal?

We bought klp croutons and used the S blade in the food processor to crush them. Add some spices.
Egg the shnitzel and use this as the topping.

Sauté onions line bottom of pan. Dip cutlets in one plate of rorie four mixed with spices like salt, paprika, onion powder. Then into other plate with beaten eggs. Place ontop of onions and place more sautéed onions ontop.


For other variety and to keep moist when rewarm you can pour chicken soup with Marsala wine over it.

Another variety is drizzle some honey over chicken

Starch, then eggs, then almond flour works fine over here. You can season the almond flour and eggs if you like. If you want to be fancy, make almond sauce with caramelized onions, then some water and starch to thicken.
