Potato or other side dishes, limited ingredients

Looking for ideas.

We don’t use oil, we do use shmaltz but so far I’m keeping my oven parve so either baked dishes without oil or cooked dishes can include shmaltz.

The apple crisp thread was mine too Smile

Roasted root veggies with salt
Spaghetti squash (with home made tomato sauce)
Chremslach
Mashed potatoes
Mashed parsnip
Mashed sweet potatoes
Potato kugel
Baked apples coated in chopped walnuts

I made yapchik, chremslach and an apple-nut thingy -recipe taken from one of the cookbooks. Today I'm making vegetable latkas.

creamy mashed potatoes (use raw egg to make creamy- it cooks in the steaming potatoes)
sweet potato hash
pan fried potato kugel
french fries
battered sweet potato fries
squash coins
sweet potato chips
vegetable patties
egg lokshen
sweet potato latkes
fried eggplant slices wjgh with a scoop of parve mock liver or mashed potatoes
butternut squash salad
mock cole slaw
cucumber salad
lemony carrot salad
avocado salad
radish salad

Do you use dairy? We don’t use oil but we use butter so I make butter fries and melt cheese on top and serve with homemade ketchup

I also make a lot of egg white omelettes with butter and cheese and veggies

I just boiled the rest of the potatoes with the rest of the zucchini. mashed potatoes with zucchini. sauteed an onion with garlic in antoher pan to add to it. salt and pepper to taste.
