I'm looking at couple of recipes.
One uses:
3 eggs Half a cup of oil
2 & 1/2 TBSP sugar Half a tsp salt
14 oz potato starch (1 & 3/4 Cups)
The other uses
1 egg 1/4 tsp salt
1 1/2 – 1 3/4 cups (167 grams) Gefen Almond Flour (not almond meal)
I'm wondering if the almond flour doesn't need oil, or will it come out better with some oil? I think I made the potato starch version in the past. It was okay, not thrilling.
Or I could just make chocolate chip cookies...(well I don't have any chocolate chips but I do have a bar of Schmerlings I can cut up...DH won't eat it but then there will be more for me!!)
How about baking with Leibers Stevia Sweeties? Has anyone tried it? I also have xylitol though that has more carbs than the stevia, I'm pretty sure.

almond flour definitely has lower carbs than potato starch does but sugar has so much carbs. that's a real killer.

3 eggs
1/4 tsp salt
1 tbsp oil
3/4 tsp honey
3 1/2 cups almond flour
Beat eggs on low in mixer. Slowly add rest of ingredients till you get a clay-like consistency.
Divide dough in 2 equal parts. Roll each part between 2 parchment paper sheets until very thin. Cut into strips like flat breads (sprinkle with dried minced onion and salt). Bake at 350 for 8-10 minutes (watch carefully, you want browned but not burnt).
