Is it better to pre-cook and then reheat sliced/cubed sliced potatoes on YT or better to only prep, store, and cook for the first time on YT ? I plan for oven to be 350.

Do you mean storing peeled potatoes and cooking them on Pessach?

Yes, peeling and storing, prepped in pan with with spices, etc. And cooking on Pesach.
