Second day is Shabbos so we'll be having traditional Shabbos food:
chicken soup
flanken
potato kugel
ferfel
eggs
liver
chulent
First day I have some leftover vegetable blintzes from Pesach, so I'll definitely use those. I'll make some kind of roast that'll be enough for both meals, night and day. I think mashed potatoes and fresh vegetable salad kinda round out my menu nicely.
Desserts I'll either bake or buy.
Done.

Oh good… so much easier with shabbos
I guess I’ll do one milchig meal
And one fleishig meal
Then regular shabbos meals
Milchig meal is always the same
tilapia, Greek salad, penne, Lukshen cheese kugel, corn salad - ice cream and cheesecake for dessert
Fleishig meal
Probably corn beef, cabbage and noodles, string beans, potato kugel… something like that-

Don't have an organized menu yet, but I'm really enjoying the thought of being able to cook whatever I want as opposed to Pesach!
Here are my ideas:
Night#1: Meat lasagna
Day #1: Pulled beef or lachmagine pizza + salads and dips. We do a milchig meal followed by a fleishig meal, so keeping it light
Night #2: Schnitzel?
Shabbos: Cholent
Not sure about fish yet, but probably morrocan fish and a salmon pastry roll
Salads/dips
Lemon cheesecake
Broccoli spinach quiche
Triangle cheesecake
Blintzes
Eggplant parmesan
Greek salad

Im still recouping from Pesach cooking “trauma”
Too many YT/Shabbat days
I guess I’ll make a cheesecake
A cheese board - just a fancy way to put out cheese and crackers
And yummy coffee the first morning
And then all meat Seudas
Whats triangule cheesecake

It looks something like this

but we normally make it with chocolate tea biscuits.
I don't have an exact recipe, but basically put down a layer of softened tea biscuits, then a sweet cream cheese filling, then another layer of biscuits, then the same filling bit mixed with cocoa, then biscuits, white filling, and then fold it up into a triangle and cover with chocolate ganache.
It's delicious!

I think we will do a dairy meal Thursday night and Friday and then regular Shabbos for Friday night and Shabbos day .
My dairy meal usually consists of some or all of the following :
Cheese blintzes
Lasagna spinach roll ups
Eggplant parmesan
Flaky dough filled with a spinach and cheese filling
Salmon
Greek salad or dairy ceasar salad
Scallion cream cheese for the challah
Variety of hard cheeses
Triangle cheese to spread on challah
Sour cream and strawberries or plain Greek yogurt with strawberries and sweetener
Cheese cake
Dairy ice cream
