Either parve or dairy ideas (kids not so crazy over fish)

I know it’s early but I won’t be able to cook the week and a half before so I would like to make things now and freeze/ or at least have the ideas ready.

Lasagna or any other tomato-pasta-and-cheese dish.
Potatoes au gratin.
Bourekas.
Spanakopita or any other dough-spinach-and-cheese dish.
Fettucine Alfredo or any other pasta-cream-and-cheese dish.
Cheese latkes.
Spinach or mushroom quiche.

I made some of these. Thanks.
Any other ideas maybe vegetable things (so it’s a little less heavy) that can be made ahead and frozen?
No soups, that doesn’t go by me.

Eta: Maybe something I can bake with canned tuna? If someone has any recipe ideas?

Veggie quiche
Tuna squares with tomato sauce
Tuna pattys
You can prep a baked pasta and freeze raw and then pop in the oven right before
