Sourdough starter and discard can both be very loose, more like a pourable batter than a thick bread dough.
When you make bread dough, you add much more flour etc so the consistency of the dough is different.
I’ve made a pancake recipe that uses some sourdough discard and they’re AMAZING, the slight yeastiness + fried makes them take like very flat donuts 😋
I made a chocolate cake with sourdough starter in it once, using a recipe from the internet, but I can’t find it. It wasn’t so incredible that I had to print it out or anything.

The recipe I use has both margarine and oil. Are you looking for one that doesn't have oil? Otherwise I'd say swap the margarine for oil.
