I have a few green apples I’d like to use, iso of a good recipe for apple crisp/kugel to make with these.

Green apples are so delicious in a crisp, I wouldn't want to add another fruit (like cranberries) to disguise their unique flavor. I would do a basic crumb top and bottom, with just the apples in the middle, maybe with a squeeze of fresh lemon.

I like to make my apple crisps with diced apples (my SIL taught me this. I chop them on the tiny chop on my chopper). It creates a really delicious texture.
