Does anyone have a foolproof recipe for sourdough using white spelt flour? I dont need 100% spelt but the more the better.
I've been making it for quite a while using a regular flour starter and then a mix of regular flour and spelt flour. Its sticky and hard to deal with. I'm thinking if I have the right ratios of water and flour, and the right technique it might work better.

300 g water
40 g starter
500 g white spelt flour
12-15 g pink Himalayan salt
I have been using this recipe for a long time. Comes out perfect each time
