Anyone have any good chocolate chip recipes that are easy to make without requiring refrigerating?

Chocolate Chip Cookies - Levana Kirshchenbaum
2 eggs
3/4 cup sugar
3/4 cup dark brown sugar, packed
3/4 cup + 2 Tbsp oil
1 Tbsp vanilla extract
2 1/2 cups flour
3/4 tsp baking powder
3/4 tsp baking soda
1/8 tsp salt
1 1/2 cups good quality mini chocolate chips

Preheat oven to 375ºF.
Wisk together the eggs and sugars. Add the oil and vanilla and mix in thoroughly. Add the flour, baking powder, baking soda, and salt until just combined. Fold in the chips.
Drop the cookies in heaping teaspoonfuls on a cookie sheets lined with parchment paper, 1 inch apart. Bake one tray at a time for 9 minutes. The cookies will firm up as they cool, so do not be tempted to bake them longer, or they will harden.

I like to use a cookie scooper to get nice round mounds and they flatten on their own during baking just enough for nice chewy cookies.

Do you think it makes a difference if I use light brown sugar instead of dark brown sugar?

I actually make a similar recipe that tastes really good but with 1/2 the oil:

Beat together:
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1/2 cup oil
2 tsp vanilla or vanilla sugar

Mix in:
2 1/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt

Add in 1/2 package chocolate chips.

Bake 350 degrees, 12 minutes for slightly under baked chewy cookies, 14 to 16 minutes for well-baked, crisper cookies.
