5 Zucchinis
5+3 onions, divided
5 sweet potatoes
1.5 C oil, divided
1.5 C flour or potato starch, divided
12 eggs, divided
1.5 Tablespoons salt, divided
Pinch pepper
(Note: The onion that is added to each layer can be chopped and sauteed before being added to that layer. 1 raw onion=1/3 C sauteed onions.)
(Note: The sweet potatoes can be boiled and mashed for supersoft results. You can also add a pinch of cinnamon to the sweet potatoes for a tasty twist.)

Layer 1: Grate the zucchini and one onion in the food processor.
Add in 1/2 C oil, 1/2C flour, 4 eggs, 1/2 T salt, pinch pepper. Mix well.
Layer 2: Grate six onions (or 5, and add 1/3 C chopped and sauteed onions) in the food processor.
Add in 1/2 C oil, 1/2C flour, 4 eggs, 1/2 T salt, pinch pepper. Mix well.
Layer 3: Grate the sweet potatoes and one onion (or 1/3 C chopped and sauteed onions) in the food processor.
Add in 1/2 C oil, 1/2C flour, 4 eggs, 1/2 T salt, pinch pepper. Mix well.
Layer into a 9x13" disposable pan or 3 loaf pans.
Bake uncovered @ 400°F for 20 minutes.

B'tayavon!

20 minutes for a kugel? Or do you bake 20 minutes 3 times after you add each layer?

I was wondering that too, but those are the instructions as printed.

I think possibly layer by layer as last time the layers merged a bit into each other..

Did you first bake each layer on its own for a bit? I would like to have clearly defined layers once it's baked.

Most 3 layer kuegls are baked in increments, 20 minutes after each layer is added.

Thanks ra_mom! Is it safe to assume that the top sweet potato layer will be baked through in 20 minutes?
