I can't tell you an exact recipe but this is what I put in:
Canned chick peas
Fresh lemon juice
Olive oil
Salt
Tiny bit of cumin
Coriander
Paprika (sometimes hot paprika)
Fresh cilantro or parsley
Fresh garlic
Blend very well, add water to thin out to desired consistency and then blend again
If you want you can add sauteed onions on top when you serve.

Beef tomatoes overripe preferred.
When I’m stuck I use wherever I have in my fridge. Even cherry and heirloom tomatoes

I made Matbucha today to use up some overripe peppers and tomatoes. Sautéed an onion and a few cubes of garlic in olive oil, then added the peppers and tomatoes (I used beefsteak tomatoes and cherry tomatoes, what I had in the fridge). I didn't have a Jalapeño pepper so I put in some red chili flakes, tomato paste, and cumin. Also added some Olives. It's delicious if I may say so myself!

So I just wanted to say that I made this dip for Shabbos and it was so yum! And a hit with everybody! And so easy to make!

Any suggestions for how to make the onion dip with sautéed onions without using mayo? We can’t have it.
Also- for amazing homemade hummus the trick we use it to never use canned. Only cooked chickpeas we buy dry and soak

I take a couple of large sweet onions, cut up and mixed with olive oil and a drizzle of honey. Grill on a sheet pan until brown and a bit carmelized. Then blend, leaving it a bit chunky. It’s heavenly😋
