I see many people online recommend baking soda and water paste. Have you tried it? My ovens get really dirty, I also need tips for keeping them clean.
Please tell me your tried and true easiest way to clean an oven and oven trays and racks.
Plus tips for keeping it that way.

The easiest is St Moritz, if you are OK with using the chemicals and protecting yourself with long thick gloves while the windows are open.
Otherwise you can use baking soda and vinegar, and you'll need some strength for scrubbing.

For me- the easiest way is filling up a PYREX with ammonia and letting that sit in the oven (OFF) for 24 hrs. Then wiping it clean and using oven cleaner for the stubborn parts
The fumes makes everything melt.
But I would keep the window slightly open

You can make a paste of baking soda and soft scrub. And then shmear it all over the oven and then wipe clean. No chemicals or harmful fumes to breathe in. Your lungs and eyes will thank you.
Please don’t use saint moritz. It’s dangerous and not healthy.

Mix baking soda with just enough water to make a paste in an oven-safe bowl; add vinegar. Use a sponge to dab the mixture on all dirt in the oven and along the bottom of the oven.
Place oven-safe bowl with the remaining mixture on an oven rack. Set your oven for 210 F degrees and let it run for 45 minutes.
Wipe up all the loose gunk, and your oven is clean.

This works very well for regular basis to keep oven shiny clean. If it's very dirty it can take a few tries and a very strong elbow.

Not the easiest way, but you don't want chemicals from St. Moritz or easy off in your food.

Spray oven with vinegar & water from a spray bottle.

Put two disposable pans of water in oven.

Turn oven to 400 for 45 minutes.

In middle, open oven and throw in a washcup of water on walls and floor. Keep away from steam.

Shut off oven and open door to cool down 10 minutes.

Wearing gloves, scrub oven with #2 steel wool dipped into baking soda, should clean easily.

Wipe with damp paper towels.

Rub down racks with steel wool.

To keep oven clean I line oven floor with foil.

Don't overfill pans to prevent spills, overflow.

Wipe spills right away.
