Carbon steel vs stainless steel

I put this under cakes because im looking for a bunt cake pan. im seeing a lot of them are carbon steel. does it work as good as stainless? is it less healthy?

ETA - are the silicone ones any good? also, whats the normal size, 12 cup?

I don't know about the steel ones. I've bought silicone ones and they are great, the only thing I would say is that they need to be stored carefully because some of mine have lost their shape.

Carbon steel rusts easily and must be dried thoroughly immediately after washing--and don't soak it! carbon steel is used for knives because it takes a good sharp edge. I don't see any advantage, except lower price, to using it instead of stainless in baking pans. If price isn't an object, I would go with stainless.

For Bundt cakes, get Nordic as they are the best.

Mine have lasted for years.

The nordic ware is aluminum. I definitely don't want aluminum.

Thank you. I guess I'll get either stainless or silicone.

Don't know if poster happy chick does, but I avoid them as much as possible, for precisely that reason. Any aluminium cookware can shed aluminium into the food, especially acidic food.

Most bakeware is aluminum because it conducts heat well. Steel does not.

The Nordic Ware ones have a nonstick coating on top, so things won't react. I agree that they are the best quality Bundt pans. I personally do not love silicone but some do. It's best to place the silicone pan on top of a metal baking sheet for stability.

Unfortunately, I do. I generally use glass Pyrex, but I still use disposable. I am aware that they are aluminum and super unhealthy. I try to line the pans with parchment paper, when I can. But I need them for convenience sometimes and I can't help it.
