I noticed when seiving wholemeal flour from 2 diff brands that one has igger ran particles that dont go through the sieve and the other has smaller bran particles that do go through the sieve.
is the first considered healthier as its less processed?

I wouldn't say it's less processed. It's less finely ground.

why are the bran particles bigger/coarser than the white/endosperm?
why arent they ground down to the same size?
