Any easy to make lunch ideas? I work a remote full time job and need ideas for things I can make fast during or make the night before.. would appreciate any suggestions!

I also work remote. Officially I can take 30 minute lunch, but many coworkers, including managers, block out 1 hour of personal time a day.
This gives me plenty time to make lunch and even prep dinner.
Most days I eat breakfast for lunch, eggs with toast. Sometimes I use leftover protein and make a salad with it.
