I inadvertently used soy sauce instead of teriyaki sauce
How do I fix this???

Add some honey or brown sugar

Thank you!
I see another way to save it is by adding rice vinegar with the honey...
Should I do that or just stick with honey??

No need for rice vinegar. Just brown sugar or honey and you can add a bit of garlic and ginger as well. I always make my own teriyaki.
