Green tomatoes- bread it and fry it
Ripe tomatoes- what about making tomato soup? Or homemade tomato sauce?

Not sure about green tomatoes (sounds like a name of a book no?) but with overripe tomatoes you can make rice with vegetables. Sautee onion, tomatoes, peppers (or any other vegetables you like, like mushrooms etc) with spices, then add water and rice (I like brown rice also) and let it cook until the water is absorbed. Comes out yummy and healthy!

I assume you grow your own and boy am I jealous! tomatoes going for $3 and $4 a lb. here and not even nice! Green tomatoes are classically pickled and taste pretty much like pickled cucumbers. overripe ones go into sauce, gazpacho or salsa.

Here you go (from Tziyona Kantrowitz in the Mishpacha)
Little Sour Green Tomatoes
3-4 lb. hard, green small tomatoes
1 head of garlic, peeled and separated into cloves
3 tablespoons kosher salt
1 stalk celery with leaves
Wash the tomatoes and place in a one gallon jar. Add the salt and garlic, cover with water, add the celery. Stand in a sunny place for 3-4 weeks.
I never tried this, so I don't guarantee the results.[/u]
