Ha, my high school daughter got a 25 lb bag of chocolate chips to make a recipe for a school event that probably needed 10 oz of chocolate chips.
We were bathing in it.
I started gifting all my neighbors a container full!

Op if you don't want to cook all those onions, you can slice or dice them, add oil to bag and fill sandwich size bags.
You can use food processor to slice them, to make it easier.
When needed defrost at room temperature, or microwave if you're in a hurry, and use as usual.
I've done it.

My in laws got more than they could ever want lol. Currently sauteing a huge batch for the freezer. Smells great in here
