Thursday is always fleish since I find it hard to cook for shabbos with dairy stuff out. Then maybe 1 other night besides Fri/Sat. We're not big meat eaters--DH and kids are picky-- so most weeknights are dairy. We do pizza, pasta/fish, falafel, breakfast for dinner usually for the other nights. Occasionally soy products, black bean burgers, salmon croquettes, or fake meat tacos. It's really preference over finances but I think it does help balance our takeout habit a bit because a lot of our dinners are so inexpensive.

You can use meat substitutes. It may not come out cheeper then meat but your kids will be getting more variety. Procssed substitutes shouldn't be thought of as bad when they are another way for everyone to get more variety, protein and nutritents.
