Is there such a thing? Is it any more than cooked potatoes thrown together with sauteed onions, seasoning and eggs?
I'd like a recipe, preferably without margerine.
Thanks.

I don't use eggs. I use cooked potatoes, a bit of oil, sauteed onions and some flavorings (usualy just garlic, salt). Mash it all together w/ a little of the potato liquid and bake in the oven (about 200 C) for 45 minutes or so. Drizzle oil on the top before you bake if you want a crunchy top.
There is a recipe in Taste of Shabbos for a mashed potato kugel with eggs. I made it once a few years ago and I didn't like it much so I didn't repeat it, but if you want to try it I can get the book out and type it up for you.

We call it a Potato Knish Kugel, and it's delicious:
2 large onions
3/4 cup oil
8 large potatoes (cooked and well mashed)
4 eggs
2 cups flour
2oz. margarine
1 TBSP. salt
1/4 tsp. pepper
1 egg & sesame seeds for glazing the top.
* Cook & mash potatoes
* Sautee onions in oil
* Combine all ingredients
* Place in greased 9x13 pan
* Brush the top with beaten egg and sprinkle with sesame seeds
* Bake at 350 for 1 hour
ENJOY!

This is my MIL's recipe - It is very popular in their house. It is very similar to the one above, and because it has more marg. you may just want to use the other one:
Doughless Potato Knish
8 potatoes - peel, cook, and mash
4 onions - dice and sautee
mix potatoes and onions.
Add:
1/2 cup oil
4 eggs
2 1/2 cups flour
6 oz. margarine
1 Tbsp. salt
1/2 tsp. pepper
mix.
Pour in 9x13 pan.
Paint the top with an egg and sprinkle with sesame seeds.
Bake at 375 for 1 hour.

Recipes look really good! Has anyone tried making this without the onions (because more kid friendly that way)?. Was it good? Did you need to make any adjustments to the recipe (maybe onion powder)?
TIA
