Salmon...or any kind of fish with veggies. Peanut butter with low carb crackers. Avocado with low carb crackers. Soups can be filling and if you have a thermos you can bring soup to work. Grilled chicken with veggies.

I did keto/low carb for a looong time and found the best dairy lunches are salads. Why are you saying no salads? Salad can literally be anything and different based on what you put in it.
Can do fish (tuna/salmon/tilapia with cheese) with veggies or a
tofu stir fry.
Spaghetti squash or Zuchini or cauliflower rice with tomato sauce and cheese.

You can make low carb flax bread- either a big batch in the oven or 1 at a time in the microwave.
Try 1 and see if you like it
I make it in the microwave in a small glass square container, or in the he oven bagel shape in the silicone doughnut mold
Slice before you freeze and then toast (or not) when you are ready to eat
You can make grilled cheese, or smear cream cheese, egg salad, tuna, salmon Pattie, burger, deli - basically any sandwich
Try 1 in the microwave befor you make a whole batch
Search- keto king flax bread in the microwave
You can sweeten it and cinnamon if you like that

There are RoYo bread, bagels or rolls.
So you can have sandwiches or paninis, grilled cheese, tuna melts.
Avocado, chummus, tuna, egg, canned salmon.
Smoothies
There are lc wraps. Lc Melba toast.
Quinoa.
Nuts.
