brown sugar has a more intense/caramelized flavor but reg sugar is ok.

Brown sugar is just white sugar mixed with molasses. Its fine.

It’s fine.
If you were baking, I’d say to add a little maple syrup to give it that deeper taste, but I don’t think you would even taste it in meatball sauce.

I would also leave it. But if you want to add something (I'm assuming you don't have molasses), you can put a dab of barbecue sauce. It often has some molasses in it, and/or gives some of that depth. But you don't need it.
