I really struggle with healthy, non carb dairy or Parve dinners. Would love suggestions if anyone has!

Tofu, eggs, fish and nuts are all healthy parve proteins.
Would any of these work for you?
All of these can be eaten with side of salad.

Once a week I make a supper like this
Onion soup
Baked fish, either salmon fillet or flounder/tilapia, just spray with Pam and spices
Side dish roasted vegetables in the oven.

I make vegetable soup with chick peas and my kids love it. I also tried black bean 'burgers' and my kids came back for seconds.
