anything and everything welcome! so bored of my same old recipes alrdy.. anything new? I do lots of chicken cutlets, my family doesnt go for bottoms, wings, chicken steak..would love a change..

The kids love the Ortega taco kit, easily made with ground beef.

This is my favorite Marsala recipe, it’s absolutely delicious. I use the gefen Marsala cooking wine bottle, sold at most grocery stores. I use Rich’s whipping cream instead of heavy cream, and margarine or olive oil instead of the butter (depending what I have on hand)

For chicken nachos I don’t have a specific recipe but here goes:

I cook a whole chicken on 350 for around 90-120 min, till skin is golden crispy on top. First I use my hands to rub on olive oil, then add salt and pepper

Once the chicken is cooked and cooled down, I take all the chicken off the bones and shred it. I keep the skin separate (and usually eat it myself later)

For the chips, I use the frozen wonton wrappers. I heat a small layer of oil in a pan and fry them in a single layer until golden and crunchy. Drain on paper towel. Repeat for whole package

Arrange all the wonton chips on a platter in a single layer, add whatever toppings you want (I use diced tomatoes, banana pepper rings, sliced olives and scallions) along with the shredded chicken

I top it off with drizzled bbq sauce, and drizzled garlic dill sauce (oxygen brand). Or garlic mayo from saladmate if I don’t have the oxygen one

Chicken Roll Ups

1½ lbs. chicken breast, cut into 8 pieces and flattened
mustard
8 slices pastrami
½ cup mayonnaise for dipping
1 cup flavored bread crumbs
duck sauce

Preheat oven at 350.
Smear chicken with a drop of mustard (optional), and place slice of pastrami on top of each chicken piece. Roll up each piece of chicken, with the pastrami inside, and secure with toothpick.
Dip rolled chicken in mayo then roll in corn flake crumbs.
Place in baking pan and drizzle with just a drop of duck sauce.
Bake uncovered in oven preheated to 350 for 30 minutes.
Serve with duck sauce on the side, as a dipping sauce.

Chicken Wellington

pastry dough squares (3”)
chicken breast, cut into bite size pieces
pastrami
hot & spicy mustard
sweet & sour duck sauce

Line a cookie sheet with parchment paper. Grease the paper very well with cooking spray.
Place a small piece of chicken breast in the center of each square. Smear a drop on spicy brown mustard on top of each piece of chicken.
Fold each pastrami slice into a small square; place it on top of each piece of chicken.
Fold the corners of each pastry square to the center of each square.
Pour 2 tablespoons of duck sauce over each folded square.
Bake uncovered at 350 for 35 minutes.
