I'm trying to save money by trying to use as much as I can thats already in my pantry.
(Also beneficial as we get closer to erev Pesach).
I have bags of cholent beans that id love to use. My family does not eat cholent during the week.
Any good ideas or recipes.
Also bags of dried lentils and dried chickpeas.
I'm not a creative cook. Chickpeas, I use as a garnish on a salad, and lentils in soup.
I'm looking for more creative and filling ways and recipes

With the chickpeas you could do falafel.
With the lentils I would try some sort of fritter... I think if you google some indian cooking sites you might be able to find something. I know you said no soup, but there may be soups that have a very different flavor profile than what you usually do with the lentils. For example, another indian dish is Mulligatawny soup. Any ideas or instructions how to do felafel or burgers or whatever.
Boil the beans, mash it down, add ingredients.
I've tried it before and it hasn't come out good, but maybe I just didn't know what I was doing.

Ok, just curious as they're handy for (with correct recipes) no fail grains & legumes.
In your case I'd likely make simple soups/stews, or cook plain & add shredded cheese & roasted vegetables. Can add to tortillas or wraps.

I have a healthier version of falafel balls.
Soak a bag of chick peas overnight. Blend it in the food processor in a few shipments along with an extra large green squash. Recipe says to peel it but I don’t because I like the green color. Add 6 cloves fresh garlic, also blended. 1 heaping tablespoon cumin & 1.5 tsps salt. I form balls with a mini scooper on a cookie sheet and once frozen throw them in a bag. I spray with oil and bake on 450.

Lentil Burgers
1 cup lentils
2 cups water
1 tsp. curry powder
salt
1 tsp. coriander
1 tsp. cumin
1 T. olive oil
1/4 cup carrots, finely chopped
2 garlic cloves, finely chopped
1 large onion, chopped
2 T. flour
2 T. tomato paste (mixed with below soy)
1 T. soy sauce
1 1/2 c. bread crumbs (or less)
Bring lentils & water to boil. Reduce heat. Add curry, pinch of salt, coriander, and cumin. Cover pan and cook 35-40 minutes until tender. Set aside covered.
Heat a skillet. Add olive oil. Saute onions. Add garlic and carrots.
Drain lentils and pour into food processor. Mix with sauteed vegetables and bread crumbs. Add flour and tomato paste/soy mixture and mix well.
Form into balls and then flatten into patties. Place on an oiled baking sheet. Bake at 350 for 20 minutes. Turn over and bake an additional 20 minutes.
Double the recipe and freeze so you can take for lunch.
Serve in buns with sliced veggies and garlic mayo.

For falafel, don't boil the beans.
Soak 24 hours. Drain, blend in food processor with all add ins and seasonings (can used dried herbs). Refrigerate batter to thicken. Form into balls and fry.

Every Sunday my teenagers take turns making healthy school lunches for the week. They usually make some sort of grain bowl, with a cooked grain or legume+rice, some sauteed or roasted veggies, and some kind of dressing or sauce. There are tons of recipes or general suggestions for such things online.
Dry beans are good for soups as well as cholent. I make dinners using canned beans sometimes, but you could probably do it by soaking and cooking dry beans first. I make burritos (https://www.imamother.com/forum/viewtopic.php?t=154#831) and tamale pie for dairy weeknight dinners.
